Fava Beans with Couscous
Fava beans, also known as broad beans make a quick vegetarian friendly dinner or a side dish. Moroccon spices bring a wonderful light spring flavor to your palette and your family table.
Ingredients:
1 lb. shelled fresh fava beans

3 cloves garlic, finely chopped
|
4 tbsp olive oil
|
2 tsp paprika
|
1 tsp cumin
|
1/2 tsp salt, or to taste
|
1 tsp of cayenne pepper
|
2 tbsp lemon juice, or to taste
|
3 tbsp chopped parsley or cilantro
|
1 tbsp lemon zest |
2 cups of cooked veggie couscous (follow box instructions) |
Instructions:
1 | Boil the freshly shelled fava beans in a pot of water, for about 20 minutes, or until skins can be pinched off and bean is tender. Drain the beans. Do not peel them. Wait until cool to add salt to taste. |
2 | While the beans are cooking, simmer garlic in olive oil over low heat for a minute or two, until the garlic is soft but not brown. Add all spices, cilantro or parsley and lemon juice. Mix well. |
3 | Add the cooked, drained fava beans to the spice mixture and combine. Cook over medium-low heat, covered, for 5 minutes to allow the flavors to absorb. Serve warm or at room temperature, on top of cooked couscous garnish with parsley and lemon zest. |
Cook's Tips:
You can add a lean protein like firm tofu or cooked chicken to this dish.
