Everyday Salad with Creamy Tofu Basil Dressing
Skip some of the extra fat and cholestrol in your diet with this dressing. This works great for that creamy ranch taste you crave in a salad or you can use it to replace mayonnaise.
Ingredients:
Creamy dressing:
1 block of soft tofu
1 tbsp. of lemon juice
4 tbsp of basil leaves
1/2-1 tbsp of yellow mustard
2 garlic gloves (if you are not a fan of garlic 1 will work)
1 tsp of salt
1 tsp of grounded black pepper

4 cups of salad greens

1 small cucumber, diced
|
1 tomato, diced
|
1 small radish sliced thin
|
1 tsp. of cane vinegar
|
1 tbsp. of olive oil
|
Any other salad ingredients you wish—sunflower seeds, carrots, sprouts, etc. |
Instructions:
1 | Blend or process all dressing ingredients in one container until smooth. Pour 2-3 tbsp. over you favorite salad greens/salad. Any extra dressing should be kept in an air tight container for one week. Be sure to add a thin layer of olive or vegetable oil on top of dressing to keep from browning.
