Edamame Pasta with Cherry Tomato Sauce

This is a very versatile dish that is great for veggie lovers, meat lovers, and those who avoid gluten. 

Ingredients:

8-10oz of Edamame spaghetti pasta (or substitute your favorite gluten-free pasta)
1/2 pint of cherry tomatoes
2 tbsp. of olive oil
1tsp of salt
1 tsp of black pepper
1 clove of garlic sliced thin
4 green onions minced
1tsp. of fresh sage minced
2tsp. of fresh basil minced
1 tsp. of fresh oregano minced
1/2 cup of dry white wine
1.5 cups of tomato pureé
2-3 cups of vegetable broth
Optional: two boneless chicken breasts (browned and fried in the heated oil of the sauce pan before simmering the sauce/remove the chicken and deglaze with the wine)
Optional: grated Parmesan cheese to taste

Instructions:

1Heat a large and deep sauce pan on medium-high heat. Add olive oil, salt, and pepper. Then add garlic cloves. Sauté for 5 mins until garlic is fragrant but do not allow it to burn.
2Add green onions and sauté for 10 mins until the onions and garlic begin to look transparent. Add cherry tomatoes (or you can add your chicken if you are making this non-vegetarian). Allow the cherry tomatoes to release some of their juices and stick to the pan (10-12mins). Add the white wine and deglaze the pan, make sure the scrape with a wooden spoon or spatula the bottom of the pan where any bits of tomato or onion have caramelized.
3Once the wine has begun to evaporate and you have a thick mixture, add the tomato pureé and let it come to a boil. Once at a boil add the broth and herbs. Place a lid on the pan and let simmer on low for 10-15 mins.
4Bring a pot of water to boil and add the pasta. Cook per instructions until al dente. Remove from heat and drain.
5Plate with a serving of pasta and 1/2 cup of sauce. Enjoy with or without Parmesan cheese.

Cook's Tips:

You can skip the meat and serve this as is with the sauce. It's great hot or cold.
