Easy Fish Cakes

A snap to make and you can add this tasty protein cake to any menu for a killer holiday meal.

Ingredients:

3 tbsp. vegetable oil, more for frying
4 garlic cloves, smashed and peeled
1 pound tilapia fillet
2 tablespoons of white wine (optional)
2 cups sweet potatoes, peeled and sliced
2 eggs or egg substitute
6 tbsp. of chopped herbs (basil, cilantro, parsley,dill,thyme,etc.)
1 green onion
1 jalapeño chile, minced seeds removed
1 tsp. of cayenne
Grated lime, lemon or orange
1/4 cup of bread crumbs
½ cup all-purpose flour
½ cup low-fat Greek yogurt
Citrus wedges for serving
1/2 tsp. of salt
Black pepper

Instructions:

1In a skillet over high heat, add potatoes and garlic, add water to just cover. Bring to a boil, reduce to simmer, cover and cook until tender, about 15 minutes.
2Clean fillets, rinse, and set aside to dry on paper towels. Drain potatoes and garlic, add to a food processor or blender. Add the rest of ingredients (except flour) and pulse until mixture becomes crumbly but not liquid.
3Using a plate add flour. Coat the outside of each patty with flour
4Heat vegetable oil within a large frying skillet at medium-high heat. Fry until gold brown—and fish is fully cooked (about 8-10 minutes—4 mins per side) add more oil if needed.
5Remove from heat and place on paper towels to absorb access oil. Serve hot with citrus wedges and a dollop of low-fat greek yogurt.

Cook's Tips:

You can substitute sweet potatoes with other low-glycemic index veggies like spinach, leeks, fennel, and kale.
