Curried Faux Egg Salad with Firm Tofu
This is a quick meatless meal with tofu. Makes a great sandwich filler in advance for a picnic or brown bagging it to the office.
Ingredients:
1 block of extra firm tofu (Nasoya) chopped into bite size chunks
-squeeze extra water out by using paper towels over sink

1 tsp. salt

1 tbsp. of dijon or mustard.

1 tbsp. of Veganaise (optional)
|
1/4 cup of coconut milk (if using Veganaise you can omit this)
|
1 tsp. fresh thyme
|
1 tbsp. white vinegar
|
1 tbsp. curry powder
|
1 tbsp. tumeric
|
1 tsp. maple syrup or sugar substitute
|
2 scallions chopped (including green)
|
1 cup of spinach leaves
|
1 tsp. ground ginger
|
1 tsp. lemon zest
|
1 clove of garlic minced
|
1 tsp. of paprika for serving |
Instructions:
1 | Mix all but the paprika and spinach leaves together. The mixing works best if you can place ingredients into an airtight plastic container with a lid and shake until fully integrated with the tofu. Let mix sit for 10 minutes or longer. Drain the liquids from your container Plate using a slotted spoon (this will keep any liquids from making everything soggy),place on top of spinach leaves first and add a dash of paprika to top of each serving. You can also make this into a sandwich.
