Creole Chicken and Vegetable Soup

A fast recipe that is chalk full of veggies.

Ingredients:

2 tablespoons vegetable oil
1/2 cup diced celery
1/2 cup diced green bell pepper
1/2 cup chopped onion
2 tablespoons minced garlic
1 pound boneless skinless chicken breasts, cubed
1 bag (16 ounces) frozen mixed vegetables
4 1/2 cups water
4 cups chicken broth
1 can (14 1/2 ounces) diced tomatoes
1 can (6 ounces) tomato paste
1 package ZATARAIN'S® Chicken Creole Rice Mix

Instructions:

1Heat oil in large saucepot or Dutch oven on medium heat. Add celery, bell pepper, onion and garlic; cook and stir 5 minutes or until lightly browned.
2Stir in chicken, frozen vegetables, water, chicken broth, tomatoes, tomato paste and Rice Mix; bring to boil.
3Reduce heat to low; cover and simmer 25 minutes or until rice is tender.
