Creamy Risotto with Rainbow Radishes

Surprisingly easy and delicious! You can serve this as is or add a light protein such as salmon, shrimp, chicken or tofu.


2-3 oz of goat cheese
2 tbsp. of Parmesan cheese (or Romano)
2 rainbow radishes, peeled and diced into tiny matchstick pieces
2 cups of arborio rice or Cajun white rice
1/2 cup of white wine (opt.)
2tbsp. of butter
1 tbsp. of olive oil or vegetable oil
4 cloves of minced garlic
1/2 white onion chopped
Fresh herbs: thyme & oregano leaves
4-6 cups of vegetable or preferred protein stock (chicken, fish, etc.)
Lemon juice from half a lemon


1Add butter and oil with seasoning to a large skillet or dutch oven. Heat on medium high.
2Add onions and garlic and sauté until translucent (be careful not to burn your garlic. ) 10 mins.
3Add your rice and with a wooden spoon or spatula make sure the rice is coated/mixed well with your sauté. 5 mins.
4Add 1/2 cup of wine or stock. Stir constantly and scrape bottom to make sure all liquid is incorporated. After rice begins to appear creamy, add more stock at a 1/2 cup at a time. Each time make sure the rice mixture absorbs all liquid and stays a wet, creamy consistency before adding more liquid. Add herbs and taste to determine if you need more salt or black pepper. 20 mins.
5At this point you can add a cooked protein like chicken or add a quick-cooking protein like peeled/deveined shrimp or salmon. Add a few tablespoons of stock if you need to keep the mixture from drying out. Cook until fish protein is pinkish or cooked (5mins.) or cooked to required temp. for safe consumption. Add your lemon juice.
6Turn the heat off and add goat cheese. Stir well until risotto incorporates all the cheese evenly. Add watermelon radishes and mix or scatter on top of each serving for decoration. Enjoy hot!
