Coconut Almond and Date Balls

Gluten-free and full of Omega 3 mind developing nutrients.

Ingredients:

3 cups of chopped Dates
1/2 cup of dried coconut
1 tsp. of vanilla extract
1/4 cup of chopped unsweetened cherries
2/3 Cup of blanched almonds (no skin)
1 tsp. of cinnamon
1 tsp. of citrus zest (lemon or orange)

Instructions:

1Combine all ingredients into a food processor or blender. Depending on how strong your processor/blender is you may need to do this in batches. Process until you have a paste. Using a tablespoon serving, roll into balls. Dust each ball in coconut for fun, truffle or snowy appearance. This recipe will make 12-18 balls and will keep fresh in an air tight container for 7-10 days.

Cook's Tips:

Limit no more than 3 balls per serving. Dates are very sweet naturally, so refrain from adding any sugar or sweetener to this recipe. For those that have nut allergies, you can make this recipe with just the coconut, cherry, and dates.
