Chocolate Cake for Breakfast

Yes, that's right. A healthy chocolate mini-cake that kids will love. 

Ingredients:

4 ripe bananas
1/2 cup of applesauce
1/2 cup of coconut oil or butter
1 1/2 cups of whole wheat flour
1 1/2 tsp. of baking soda
1/4 cup of cocoa
1/4 cup of semi sweet chocolate chips
2 eggs
1/2 cup of brown sugar
1 tsp. of vanilla
Additional ingredients: 2 tsbp. of flax meal or wheat germ, 1/4 cup of raisins, cranberries, or any other dried fruit or nuts.

Instructions:

1Preheat the oven to 350 degrees.
2Cream butter/oil and sugar. Once creamed add bananas and applesauce (blend well in a processor or by hand). Add eggs, blend well. Add the wheat germ or flax meal until incorporated.
3Add all dry ingredients and mix well. Finally, fold in the chocolate chips and any other additional ingredients.
4Using a large muffin pan (you can also use a smaller muffin pan and fill up to 12) fill each opening 3/4 way.
5Place in oven for 20 minutes (or until middle are set and firm). Remove from oven and let cool for 5 mins. before enjoying!

Cook's Tips:

If using oil instead of butter, bake for only 12-15 mins. in the oven.
