Chocolate Cake for Breakfast
Yes, that's right. A healthy chocolate mini-cake that kids will love.
Ingredients:
4 ripe bananas |
1/2 cup of applesauce |
1/2 cup of coconut oil or butter |
1 1/2 cups of whole wheat flour |
1 1/2 tsp. of baking soda |
1/4 cup of cocoa |
1/4 cup of semi sweet chocolate chips |
2 eggs |
1/2 cup of brown sugar |
1 tsp. of vanilla |
Additional ingredients: 2 tsbp. of flax meal or wheat germ, 1/4 cup of raisins, cranberries, or any other dried fruit or nuts. |
Instructions:
1 | Preheat the oven to 350 degrees. |
2 | Cream butter/oil and sugar. Once creamed add bananas and applesauce (blend well in a processor or by hand). Add eggs, blend well. Add the wheat germ or flax meal until incorporated. |
3 | Add all dry ingredients and mix well. Finally, fold in the chocolate chips and any other additional ingredients. |
4 | Using a large muffin pan (you can also use a smaller muffin pan and fill up to 12) fill each opening 3/4 way. |
5 | Place in oven for 20 minutes (or until middle are set and firm). Remove from oven and let cool for 5 mins. before enjoying! |
Cook's Tips:
If using oil instead of butter, bake for only 12-15 mins. in the oven.
