Chile Roasted Cauliflower

An amazing way to enjoy cauliflower and also ingest vitamins and nutrients (especially vitamin C and K.)

Ingredients:

1/4 cup of olive oil
2 cloves of garlic minced
1 tsp. of ginger
1 tsp. of cumin
1 tsp. of red pepper flakes
1 tsp. of cayenne
1 tbsp. of lime juice
1 tsp. of lime zest
1 tsp. of salt
1 tsp. of freshly ground pepper
1 large cauliflower cut into bite size pieces

Instructions:

1Preheat oven to 425 degrees. Place a sheet of parchment onto a large baking sheet.
2In a large bowl add all ingredients. Toll until cauliflower pieces are covered evenly.
3Add cauliflower mixture to baking sheet. Roast in oven for 30-35 minutes until pieces show browning and are tender.

Cook's Tips:

Great for snacking on or serve as a side or replacement for rice, potatoes, or pasta. Experiment with different chile pepper seasonings (dry or fresh chile like ancho and jalapeño are also great additions or substitutes.) Also try adding spices such as allspice, curry, garam marsala, etc.
