Chia Chocolate Pudding

Super easy pudding that you can alter flavors for by adding fruit, low sugar/fat-free toppings or try a vanilla version. Chia seeds are high in omega-3 and protein. 

Ingredients:

1 1/4 cup of coconut milk
1 tsp. of vanilla
5 tbsp. of maple syrup or 9 pitted dates pureéd
1/3 cup of chia seed
1/4 cup of ground cacao or cocoa
1 tsp. of cinnamon
Optional: fresh fruit or non-dairy, sugar free whip

Instructions:

1In a bowl add all ingredients except topping.
2Whisk vigorously until blended.
3Cover bowl with a lid and refrigerate for 3-8 hrs (overnight is best) until chia seeds have soften and you have a pudding texture.

Cook's Tips:

You can substitute coconut milk with any nutmilk.
