Cherry Clafoutis

Clafoutis is a French dish with a flan-pudding like texture. This dessert recipe is a hit for dinner parties, holidays, and family dinners. 

Ingredients:

2 cups of frozen sweet cherries (defrosted)
1 tbsp. fresh lemon juice
1 tsp. of cardammon
3/4 cup skim milk
1/2 cup greek yogurt(plain)
Non stick cooking spray
2 tbsp. of margarine or butter
2 tablespoons brown sugar
3 tbsp. of sugar
1/2 tsp. cinnamon
2 large eggs
1/2 vanilla extract
Confectioners sugar to sprinkle on top
Pinch of salt
2/3 cup sifted unbleached all-purpose flour

Instructions:

1Preheat the oven to 375 degrees. Spray 9-10inch baking dish with cooking spray.
2Toss cherries with brown sugar, cinnamon, cardamon, and lemon in a small bowl.
3Heat the margarine or butter in a large, heavy skillet over medium-high heat. Add cherries. Cook, stirring, until they begin to release juices. Stir fruit until it has softened five mins. Remove from the heat, and transfer to the baking dish.
4In a large bowl, whisk the eggs with the vanilla extract. Add sugar and salt, and whisk together. Slowly mix in the flour, then add the yogurt and milk. Whisk until thoroughly blended. Pour over cherries inside the baking dish.
5Bake 35 to 40 minutes until top is brown and the clafoutis puffed/firm. Press on the middle to be sure, if it is firm, then the clafoutis is ready. Remove from the oven. Cool for a few minutes and always serve warm.
