Chaat Masala Okra Salad
This recipe marries okra with a tomato spiced mixture that allows the okra to stay crisp (not slimy.)
Ingredients:
Chaat Masala: Toast for five mins. on medium heat in a small pan (dry). Then mix 1/2 tsp. of anise seeds, 1/2 tsp. of cumin, 1/2 tsp. of ground coriander and 1/2 tsp. of fennel seeds. Place to the side and cool in a small bowl. |
1/2 red onion sliced thin

1 (8oz.) can of diced tomatoes

1 bundle of fresh cilantro, chopped
|
1 cup of canola oil for frying |
1 lb. okra, trimmed and cut lengthwise into strips
|
1/2 lemon juiced |
1/2 tsp. of salt |
Instructions:
1 | A few hours before frying/assembling mix the onion, tomato and cilantro into a small bowl and refrigerate. Take bowl out of fridge when ready to prepare the okra. |
2 | Prepare a plate with paper towels for the okra to rest and drain the oil. Use a large, wide, and deep pot or skillet. Heat at medium, add the oil and using a thermometer check to make sure the heat reached 350 degrees F. Add okra in batches and fry for 7-8 mins until golden brown. Remove and place on already prepared plate with paper towels. Let cool for 10 mins. |
3 | Use a large bowl and mix the tomato mixture with the fried okra strips. Add lemon juice tossing well. Serve. |

You can serve this dish over small pasta or rice.
