Cauliflower Roasted with Crushed Red Pepper, Cumin, and Lime

Easy clean up and this recipe can be prepared in the oven or on the grill.


1 Cauliflower (remove leaves but keep stem/head in tact.)
4 cloves garlic, minced
1 crushed red pepper
1 teaspoon cumin seeds toasted and ground
4 tablespoon of olive oil or avocado oil
Salt and pepper to taste
1/2 Lime, juiced
1 tablespoon of oregano minced


1Preheat oven to 325
2Cut florets into chunks from the Cauliflower.
3Place in a bowl with garlic, crushed chile, cumin, salt & oil and toss gently to mix and coat generously.
4Place florets into a roasting pan.
5Roast 1-1/2 hours in oven (grill time will be closer to 25 mins-30mins)
6Stir / move florets occassionally during the roasting to for even roasting. When florets are golden brown and tender, remove.
7Squeeze juice over the cooked florets.
8Top with oregano.
9Serve alone or with your favorite main dish.

Cook's Tips:

If grilling, place cauliflower in a grilling basket or lay a sheet of aluminum foil down first before roasting.
