Cauliflower Green Bean Tacos
Veggie tacos are fun and easy to prep for a quick meal full of flavor and healthy good stuff!
Ingredients:
1 head of cauliflower |
1/2 lb of green beans (clean and ends snapped off) |
1/4 cup of pea sprouts |
1 cup of low-fat shredded Mexican cheese (optional) |
1 cup of salsa |
8 small white corn tortillas |
1 tbsp. of ripe avocado cubed |
Wedges of lime |
Instructions:
1 | On your grill set the temperature to high and use a grilling basket or oil the grates before grilling veggies. If using your broiler set oven to Broil (500 degrees.) |
2 | Wash and prep cauliflower and green beans. No need to cut the cauliflower just remove any wilted parts and remove the main stemPlace them in a roasting pan for the broiler or in a grilling basket. Drizzle olive oil and a squeeze of lime wedge over the veggies. Grill cook: flipping every 3 mins for 6-9 mins. Broil for 15 mins. |
3 | Remove from heat and let cool for 10 minutes or more. Once cool enough to touch, use a clean cutting board and roughly chop the veggies and sprinkle a tsp. of red crushed pepper over them. Prep the rest of your taco fixing, small bowls and assemble. Start with veggies, then cheese, 1 tbsp. of pea sprouts, avocado and lastly 1/2 tbsp. of salsa. |
4 | Serve two tacos per person. Enjoy! |
