Cashew Queso and Salsa

Cashew cheese is great for a non-dairy spread on nachos and only takes a little bit of planning to execute. After you try this cashew puree you may never go back to yellow nacho cheese. 


1 cup of unsalted cashew nuts
1/2 cup of filtered water
1 lemon juiced
1 garlic clove (optional)
2-3 cups of tortilla chips (regular or multi-grain)
1 tsp. of diced jalapeño
1/2 cup of salsa (store bought is fine)


1Place cashews and water in an airtight container for 1 hour. Strain water and rinse nuts well. Place in a blender or processor with fresh lemon juice and garlic, puree until smooth. Scrape out into a small mixing bowl.
2Add salsa and jalapeño to cashew cheese. Mix well and then serve at room temperature with chips. Refrigerate remaining cashew cheese for up to 1 week.

Cook's Tips:

Nutritional info is listed for 2 tbsp. servings and with 6 chips pers serving. This dip is wonderful with crackers, fresh vegetables, or a toasted slice of bread. Feel free to experiment with using 1 tsp. of fresh herbs, dijon mustard, vinegar or other flavor enhancements.
