Cashew Blueberry Spread
Easy spread that is low in saturated fat, high in good fat, and high in protein.
Ingredients:
1 cup of unsalted cashews (soaked overnight in 1.5 cups of filtered water) |
half a pint of blueberries (frozen is okay to use instead of fresh) |
1 tbsp. of honey (optional) |
1/2 tsp. of salt |
Instructions:
1 | Drain water from soaked cashews |
2 | Place all ingredients in blender or food processor and blend until a smooth paste appears. |
3 | Chill for at least 1 hour. |
4 | Spread onto your favorite bread or bagel. |
Cook's Tips:
Alter this recipe with replacing blueberries with any other berry, chocolate, or go savory with 2 tbsp of your favorite fresh herbs. Also is great to use as a substitue for cream cheese in no-bake cheesecake recipes.
