Caribbean Pizza
Ingredients:
If you like pizza, try this easy recipe. Pineapple and cilantro give a flavor lift. This recipe is high in fiber, calcium, vitamin C and iron.
8 slices whole grain bread
1-1/2 cups no-salt-added tomato sauce
2 cups black beans, drained and rinsed
2 cups drained pineapple chunks
1 cup nonfat grated mozzarella
4 tablespoons fresh, chopped cilantro
Spray bread with oil; broil on both sides in oven.
Spread oiled side of bread with 3 tablespoons of tomato sauce.
Follow with 1/4 cup black beans, pineapple chunks and mozzarella on each slice.
Bake at 350 for 10 minutes then sprinkle with fresh-chopped cilantro.
Serve with a salad.
