Buttermilk Pudding with Berries
Here is a low sugar, low calorie (under 300 calorie) dessert.
Ingredients:
2-4 tablespoons of cornstarch
|
1 cup half and half
|
1 tsp. of vanilla
|
6 tablespoons sugar, honey, or sugar substitute
|
1 cup well-shaken buttermilk
|
Garnish with fresh berries |
Instructions:
1 | Add cornstarch to 1/4 cup milk in a small saucepan and heat on low/simmer

2 | In another saucepan (medium sized) add remaining half and half with sugar and bring to a boil over medium heat, stir until sugar has dissolved. Remove from heat. Add cornstarch mixture to , stirring until dissolved. Remove from heat, stir and let cool until cold but not thickened, about 10 minutes.

3 | Stir in buttermilk, then poor into a large glass measure, discarding solids. Pour into bowls and chill until set, at least 8 hours within the refridgerator. |
