Braised Artichokes with Chicken Breasts

A light summer dinner that is filling and low in calories. 

Ingredients:

2 globe artichokes (cut in half lengthwise)
1 lemon
1 pinch of salt
Ground black pepper
1 tbsp. of butter
1 tbsp. of olive oil
2 chicken breasts

Instructions:

1Heat a large cast iron skillet on medium heat. Add olive oil, butter, salt, and black pepper.
2Once skillet is hot, add breast and cook (flipping after 10 mins each side) for 20 minutes. Make sure the chicken has a browned a little on each side. Add artichoke halves, cut side down, and spoon juices and olive oil / butter liquid over the artichokes (ten-15 mins.)
3Squeeze a lemon over chicken and artichokes. Artichokes will begin to turn a dark green as they finish cooking. Serve all items hot on plates.

Cook's Tips:

Best way to eat artichokes is to peel each leaf off and eat th meaty interior towards the bottom of the leaf. You can also flip the artichoke halve over while hot, and spoon our the heart (the soft meaty area near the stem) and eat.
