Blueberry Mint Popsicles

These popsicles are fun and low in sugar for kids. Easy to make and sure to keep you cool all summer long. 

Ingredients:

2 sprigs of mint (minced)
Simple syrup: 1 cup of water, 1/4 cup of sugar or Splenda, and 1 sprig of mint
2 cups / 1 pint of blueberries
1 tsp. of lemon zest.

Instructions:

1Place sugar in a small pot with 1 cup water and slowly bring to a boil, allow the sugar to dissolve (stir every few mins). Let it simmer 10 minutes, then remove from the heat and pour it over a mint sprig, inside a small-medium sized bowl. Let the mint sprig flavor the bowl for a half hour or longer. Remove the mint sprig.
2Process in a blender or food processor the blueberries, lemon zest, mint and mint syrup. Mix then pour into molds.
3Freeze molds for 3-4 hours. Half way through the time (1.5-2hrs) insert sticks. Let finish freezing. Up to 4-5 hrs.
