BBQ Chicken with Turmeric Rice Grits
Try this tasty combo for a new take on barbecue chicken and get a healhty dose of curcumin (found in turmeric) to help stomach upset and ease your digestion!
Ingredients:
2 large chicken breasts (boneless) |
2-3 tbsp. of Barbecue spice mix or 1 cup of Barbecue sauce (store bought / look for one with natural ingredients and low sodium) |
Favorite fresh greens such as spinach leaves |
Turmeric Rice grits: |
1 cup of rice grits |
1 tsp of salt |
2 tsps of turmeric |
black pepper to taste |
1 grated shallot |
1 minced garlic clove |
3-3.5 cups of water or vegetable broth |
Instructions:
1 | In a skillet on med-low heat add vegetable oil and your chicken breast. Sear each side well and flip once each side shows a little brown on the edges.Turn the head to low and add your spices or sauce. Place a lid over the skillet let cook for 20mins until tender enough to shred with a fork. |
2 | While chicken is cooking bring a medium pot with your broth/water to a boil. Add all the rice grit ingredients and stir until incorporated. Bring the heat down low just enough to keep a steady boil but not to overflow your pot. Cook for 15-20 minutes until liquid is absorbed and you have a creamy grit consistency. |
3 | Serve on plate with favorite salad greens like spinach or steamed veggie. |
