Barbecued Butternut Squash

Rich and tangy this barbecue treat is great by itself or served with a salad, burger, or additional grilled veggies.

Ingredients:

1 large butternut squash
Marinade: 1 tsp. cayenne, 1 lemon juiced, 2 tbsp. vegetable oil, 1 garlic clove minced, 1 tsp. black pepper, 1 tsp. salt, 1 tsp. cajun seasoning, 1 tsp. of Steen's cane syrup, 1 dash of hot sauce.

Instructions:

1Slice butternut squash in half, remove seeds and veins, then slice into 1" thick slices lengthwise.
2Mix marinade into a large, deep, dish or roasting pan. Place all slices of squash into the pan and cover with a lid or plastic. Let marinade for 1 hour or longer. Place in the refrigerator if overnight.
3Heat up the grill to medium-high. Oil the grates (lightly). Place all slices onto the grill and cook each side until tender and dark grill marks appear. (7-10 minutes each side.)
4Serve warm as a side or place on a plate of greens as a main dish.
