Barbacoa Turkey Soft Tacos
Barbacoa is traditionally an all day roasting of beef marinated with chilles. In this recipe we take similar elements and use ground turkey prepared in a faster, yet delicious method!
Ingredients:
Pureé: |
2 tbsp. of pecans |
2 tsp. cumin
|
Freshly ground black pepper |
2 tbsp. of salt (1 tbsp of pureé and the other for the ground turkey)

1 tsp. of red pepper flakes |
4 garlic cloves, unpeeled
|
1 tsp. of ground ginger |
1 pinch of allspice |
1/2 large onion chopped
|
2-3 small jalapeños
|
Sauté: |
1/2 large onion chopped
|
1 lb. of ground turkey
|
2 celery stalks, chopped
|
2 carrots roughly chopped |
Garnish/Serve with: |
1/2 pint of cherry tomatoes
|
Shredded cheese or Cojita cheese crumbles |
Favorite greens (spinach, arugula, romaine or Bibb lettuce) |
1 dozen flour or corn tortillas |
Instructions:
1 | In a blender combine the pureé ingredients and pulse/blend until a rough paste forms. Set aside. |
2 | In a large skillet on medium heat, add vegetable oil and onions. When onions appear translucent (10 mins) add remaining vegetables and turkey. Scrape bottom of skillet with a wooden spoon or spatula to combine all bits of the veggies. Once the turkey appears to brown (bits of brown appear in the texture of the crumbles) add the paste from the blender and continue to scrape until well incorporated and steaming hot. (12-15 mins.) |
3 | Assemble with warm tortillas. Enjoy with favorite side of salsa and beans! |
