Bacon Wrapped Asparagus with Roasted Cauliflower and Steamed Snap Peas

You can grill this tasty asparagus/cauliflower dish or broil it in the oven. We dare you to say you hate eating your veggies after trying this with the king of flavor, bacon. 

Ingredients:

Bacon wrapped asparagus: 2 bundles of asparagus(10-20 stalks), stems trimmed at bottom 1/2 lb. of bacon sliced,Freshly ground pepper, 1 tbsp. olive oil
1 large head of cauliflower 1 tsp. of lime zest 1/2 tbsp. of olive oil 1 garlic clove minced 1 tsp. of lime juice
1 lb. of snap peas

Instructions:

1Set broiler or grill to high.
2For the cauliflower : clean and remove leaves, or any unwanted brown spots within the head of cauliflower. Using fingers, mix seasoning (except for garlic and lime juice) and drizzle over the cauliflower. Place in a broil safe pan. Place cauliflower inside the oven at the same time as the asparagus. Broil for 10 mins (depending on size, you may need to place under broiler 5 minutes longer)
3Take clean/trimmed asparagus and rub the olive oil with your fingers over each stalk. Take each stalk and carefully wrap a piece of bacon around the thick middle section of the asparagus until you can close the roll. Place each finished stalk within one or more broiler safe pans. Place on the pan(s) onto the top rack and let broil for 8-10 minutes.
4While broiling bring a large pot of water to a boil. Place a steaming basket or colander over the boiling water (carefully) and lower the water to medium-high (simmer.) Place snap peas into the steaming colander or steaming basket and lightly cover. Using tongs rotate snap peas from bottom to top every 2-5 mins. Snap peas will be tender within 5-10 mins. Remove from heat and place in a serving dish with tongs.
5Pull out asparagus and cauliflower out of the oven, turn off heat. Place cauliflower in a heat safe large bowl, and slice into long, chunks from stem to floret. Add a tsp. of lime juice and garlic. Toss one more time. Add pepper and salt to taste.
6Assemble onto each place 2-3 bacon asparagus stalks (with ground black pepper), 2-4 slices of cauliflower, and 1/4 cup of steamed snap peas. Eat while hot.
