Baby Sweet Peas and Carrot Ribbons
A great side veggie to introduce to children. Making veggies for children can be easy by using fun shapes, colors, and sizes.
Ingredients:
1 8 oz. bag of frozen peas |
3 large carrots, peeled and sliced paper thin and long |
2 tsp. of vegetable oil |
1 pinch of salt |
1 half lemon juiced |
Optional: 1 cup of corn kernels, chopped red bell peppper, etc. |
Instructions:
1 | Heat a large skillet with the oil on medium-high heat. Add carrot ribbons, salt, and sauté for five minutes. Add the peas and turn the heat down to low-medium. Gently stir keeping the peas/carrots from sticking. Once peas are defrosted and carrots are tender, turn off heat and remove skillet. Squeeze half lemon over the peas/carrots. Stir to incorporate. |
