Asian Peanut and Sesame Chicken Salad
This is a great pasta salad for picky eaters and young children.
Ingredients:
2 chicken breasts (baked and shredded)

1 pkg. of fusilli or penne pasta
|
1/2 cup of torn butter leaf lettuce |
2 cups of freshly steamed snap peas
|
1 large carrot diced
|
1 tbsp. sesame seeds
|
1 green onion chopped
|
Dressing:
1/4 cup creamy peanut butter
2 tsp. brown sugar
2 tbsp. reduced-sodium soy sauce
2 tsp. sesame oil
1 tsp. vinegar (rice or apple cider will work) |
Instructions:
1 | Steam your snap peas for 5-10 minutes in a steam basket or within a colander carefully placed over a medium sized pot of steaming water. Steam until bright green but still crispy. Set them aside to cool while you put the rest of the salad together. |
2 | Cook pasta according to package directions; add snow peas to the boiling water about one minute before pasta is done. Drain and rinse under cool water.

3 | Mix all the dressing ingredients into a large bowl. Add a little warm water if peanut butter dressing is too thick. Add the pasta and veggies. Add chicken and toss to combine/mix. Garnish with green onion and sesame seeds. Serve warm. |
