Asian Peanut and Sesame Chicken Salad

This is a great pasta salad for picky eaters and young children. 

Ingredients:

2 chicken breasts (baked and shredded)
1 pkg. of fusilli or penne pasta
1/2 cup of torn butter leaf lettuce
2 cups of freshly steamed snap peas
1 large carrot diced
1 tbsp. sesame seeds
1 green onion chopped
Dressing: 1/4 cup creamy peanut butter 2 tsp. brown sugar 2 tbsp. reduced-sodium soy sauce 2 tsp. sesame oil 1 tsp. vinegar (rice or apple cider will work)

Instructions:

1Steam your snap peas for 5-10 minutes in a steam basket or within a colander carefully placed over a medium sized pot of steaming water. Steam until bright green but still crispy. Set them aside to cool while you put the rest of the salad together.
2Cook pasta according to package directions; add snow peas to the boiling water about one minute before pasta is done. Drain and rinse under cool water.
3Mix all the dressing ingredients into a large bowl. Add a little warm water if peanut butter dressing is too thick. Add the pasta and veggies. Add chicken and toss to combine/mix. Garnish with green onion and sesame seeds. Serve warm.
