Apple Peanut Butter Sandwiches
What happens if you remove bread from PB&J? Something amazing like the apple (low sugar crispy fruit ring) sandwiches with your kids' favorite nut butter.
Ingredients:
1 cup of rolled oats |
1 tablespoon of raisins, dates, or dried cranberries |
4-5 tablespoons of no sugar peanut butter |
1 teaspoon of local honey or agave nectar or natural sugar substitute |
1 large apple cut into 1 inch rings (decored/seeds removed) |
1/2 tsp. of cinnamon |
1/4 tsp. of ginger |
Instructions:
1 | Heat up the oats in a pan on medium heat with the cinnamon and ginger. Using a wooden spatula toss in the heat until browned. Remove from heat and place in a medium sized mixing bowl, add the rest of the ingredients minus the apple rings. |
2 | Taking two rings at a time, spread 1 tablespoon of the peanut butter mixture between each set of rings. |
3 | Best served/eaten as soon as assembled to avoid browning of the apples. Enjoy! |

This snack is best for kids two years old or older. Be aware of your child's allergies and substitute any of the ingredients for other fruits, nuts, sweetners to fit your child's dietary needs.
