Apple Collard Salad
Ingredients:
2 teaspoons olive oil
1 small onion, peeled and sliced thin
2 apples, cored and sliced with peel on
1/4 cup walnut pieces
1 bag frozen chopped collard greens (12 ounces)
Black pepper to taste
Juice of 1 lemon
Heat olive oil in large skillet over medium-high heat. saute the onion, apples and walnuts until golden brown, about 4-5 minutes. Add the collard greens and cover and cook until heated through, about 8 minutes. Stir well and season with lemon and black pepper. Serve hot.

Cook's Tips:
Note: you can also use spinach in place of the collard greens. This salad goes well with grilled chicken or fish or pasta. We served ours with lasagna.
