Zucchini Latkes

Try this healthy version of latkes as a snack or to accompany any meal. 

Ingredients:

6 zucchini
1 1/4 almond meal
2 beaten eggs
1 teaspoon of minced mint
1 minced garlic clove
1/2 cup of coconut or avocado oil (use more as needed)
1 tsp. of salt
Ground black pepper to taste
Toppings: Green yogurt, or low-fat sour cream,applesauce, and chopped green onions

Instructions:

1Grate zucchini into medium/thin width strips with a food processor or box grater. Place shreds into a bowl and toss with 1 tsp. of salt. Let stand 30 minutes.
2Squeeze zucchini in batches into paper towels or a tea towel to remove as much liquid as possible. Transfer zucchini to a large bowl and stir in bread crumbs, eggs, mint, and black pepper to taste.
3Turn oven on and heat to warm (200 degrees or lowest setting.)
4Add oil to a large frying pan over medium heat. Once hot,use an ice cream scooper and scoop out into the pan 6-8 patties. Using a metal or heat resistant spatula, flatten the patties. Fry until edges on both sides is golden brown. Remove from heat and place onto a oven safe large dish with paper towels to absorb access oil. Keep large dish in the oven to keep batches warm as you complete all the latkes.
5Serve warm with toppings.
