Pimento Peppers and Shrimp

Pimento peppers can give a great spicey/smoky layer to sweet shrimp.

Ingredients:

1 onion diced
1 chopped stalk of celery
1 minced garlic clove
1 tbsp. of tomato paste
1 tbsp of vegetable oil
2 tsp. of cayenne pepper
2 cups of grain rice (you will want to cook rice ahead of time.)
3 1/2 cups of seafood or veggie stock
1 bay leaf
1 lb. of peeled shrimp
6 pimento (cherry) peppers diced or sliced in rings
Salt/Pepper to taste

Instructions:

1Sauté onion in olive oil on medium-low for 10 minutes. Add carrot, celery, and garlic. Cook for 15 minutes.
2Add, over medium heat tomato paste, 2 tsp. cayenne, and rice. Toast 2 minutes. Deglaze with 1/2 cup of stock. Reduce heat; add rest of warm stock.
3Top with pimento peppers and bay leaf. Simmer 15 minutes. Add 1 pound peeled shrimp. Cook 1 to 2 minutes. Add salt and pepper to taste
